WebIm struggling with using OMV shared NFS with Portainer. One of the shared folders on my OMV is accessible from whole subnet and has full r/w access permissions for user "docker" with uid 1003. Then ive got a different machine running Docker and Portainer. WebIt will prompt for the share password (if one is set) and will try to mount it as the user bruno (which the same user as in OMV), if the share user is different you'll have to add that in the mount options. I think the syntax is username=yourShareUser but I'm typing by memory I may be mistaken. Might be user=yourShareUser or uid=yourShareUser.
